Cathedral High School-Tamalada couple unknown. Definition: Tamale a Mexican dish of seasoned meat wrapped in cornmeal dough and steamed or baked in corn husks. You don't eat the husks. Can also be sweet baked made with raisins pine nuts, some times with coconut shredded pieces. A tamale supper is usually three tamales served with rice and refried beans. When you have a tamalada you are said to serve many dinners, thus tamalada. At the Cathedral tamalada the cooks go overboard by serving the original meal with a guisado, fried steak meat with spices in a supple chile sauce, chile con queso (Chile sauce with melted cheese) and tostadas usually a meal, and a half. This is served with several rounds of free beer or beverages and dance music to last the evening.
